Teresa’s Keto Queso Dip

  • 2 tablespoons butter

  • 1/2 medium onion, finely chopped

  • 1 medium jalapeno, minced

  • 1 teaspoon salt

  • ¾ cup heavy cream

  • ¼ cup water

  • 8 ounces of white American Cheese ( can be substituted by Cream Cheese)

  • 8 ounces shredded cheddar

  • 4 ounces shredded Monterey jack

 

Melt the butter in a pot over medium heat.

Stir in the onion and jalapeno and cook until the vegetables have softened.

Add the white American cheese, heavy cream, salt, and water to the pan and cook, stirring constantly, over medium heat until the cheese has melted.

Reduce heat to low and add the shredded cheese a handful at a time, whisking constantly, until all of the cheese has been added and the sauce is smooth and creamy.

Add additional water as desired to reach the consistency you prefer.

Teresa’s Guacamole Recipe

  • 3 Avocados, ripe

  • 1/2 Small red onion, finely diced

  • 2 Roma tomatoes, diced

  • 3 Tablespoons finely chopped fresh cilantro

  • 1 Jalapeno pepper, seeds removed and finely diced

  • 1 Garlic cloves, minced

  • 1 Lime, juiced

  • 1/2 Teaspoon sea salt

Slice the avocados in half and remove the pit.

Add the avocado into a mixing bowl and mash it with a fork.  Make it as chunky or smooth as you’d like.

Add the remaining ingredients and stir together.

Give it a taste test and add a pinch more salt or lime juice if needed.

Serve your guacamole with Apia chips!
